The kitchen is known, it does not invent

To understand chef Alberto Annarumma you have to think about who is born on the Amalfi Coast, has traveled the world and then got back home. He met the Japanese and the French cousine, he grew up with the Italian one and, therefore, his culinary philosophy is the result of a work of removal, as well as a deep exploration of raw materials. According to chef Annarumma the cousine is not invention but you knowledge. In his plates, the use of lemon is a conditioned reflex.
